Kilkenny County Council is responsible for the Official Controls( including Approvals) of small meat processing plants in the Local Authority area .
New hygiene legislation has come into law since the 1st January 2006 and replaces all other legislation , they include :
- Regulation (EC) No852/2004 on the hygiene of foodstuffs
- Regulation (EC) No 853/2004 laying down specific rules for the hygiene of foodstuffs
- Regulation (EC) No 854/2004 laying down specific rules for the organisation of official controls on products of animal origin intended for human consumption
- S.I. No. 910 of 2005 EC ( Food and Feed Hygiene ) Regulations 2005
This legislation lays down rules on issues such as :
- Food Safety Management Systems e.g. HACCP
- Labelling and Traceability
- Waste Disposal
- Sampling Plans
- Staff Training
- Structures
In addition to official controls veterinary staff provides , information, advice and guidance to proprietors and perspective proprietors of such premises .
